Bianca Mascagni is a young farmer on a mission to introduce more sustainable methods to olive oil production.

Nestled in the Tuscan countryside, and flanked by the olive groves and vines of other farms, she has planted over 7000 olive trees since taking over in 2015. The planting uses technology to minimise water usage; using weather data to determine the timing of any watering and clever irrigation systems to deliver water more efficiently to the trees. Not only this, but the farm is certified organic.
