THE BLADESMITH
Paulo Tuna is a sculptor turned master bladesmith. From his workshop in Caldas de Rainha, near Lisbon, he produces some of the world’s best knives for some of the world’s best chefs - including René Redzepi of Noma, once hailed as the best restaurant in the world.
Each knife is crafted by hand; Paulo laboriously forges, hammers, grinds and polishes each one until it is perfectly balanced and, of course, sharp.
